After being hand picked, the grapes are delicately placed in the pneumatic grape press. This machine slowly crushes the grapes in order to preserve the subtle elegance of our wines. Next, the must naturally settles using colder temperatures to enhance sedimentation. This process is called static settling (that is to say by natural deposition of coarse particles).

Fermentation is also a natural process. Natural yeasts in the grape initiate alcoholic fermentation without having to add chemical substances whatsoever. « It’s the same idea as a homemade sourdough starter- better than the yeast you can buy off the shelf! ».

 

In 2004 the new set of vats enabled us to heighten the wine’s quality. Since, we are able to control temperatures, enhancing the precision of our wines and attaining yet another one of our objectives.

Lastly we bottle our wine ourselves on the domain to ensure that all the essential parameters have been met.

This approach not only allows the grape to naturally speak for itself but also reveals the quintessential essence of each terroir.
